The Don Eduardo Coffee Tour, run by The Plantation House Hostel, is a favorite in Salento. The farm sits on green hills just outside town. Tours are bilingual, friendly, and highly informative.
First, guests walk among the coffee trees. They learn about growing cycles, hand-picking, and wet processing. Next, they roast a small batch and taste the results. The tasting includes pairings with chocolate and panela, which makes the flavors pop.
The tour at Finca Don Eduardo highlights small-scale farming and fair-trade values. Many visitors return to buy beans. The profile is bright and clean, with citrus, cocoa, and light floral notes. Meanwhile, The Plantation House offers cozy stays in private rooms or shared cabins, often visited by hummingbirds.
Beyond the tour, the farm is a small boutique project in the Andes at 1,800 meters. It uses clean, traditional methods and permaculture principles. As a result, four high-end varietals grow in a diverse ecosystem of fruit trees, native plants, and flowers.
The story also matters. Don Eduardo—Timothy Edward Harbour, from England—arrived in 2004. He fell in love with Cris and with Salento’s landscapes. Together they opened The Plantation House, the town’s first hostel, and helped guide early visitors. In 2007 he bought the farm. Since then, he has built a complete, passionate, and unique coffee experience.
